Considered the most precious variety of truffle, mainly found in regions located around Piedmonte and central Italy. The exterior is white to olive yellow, inside it is creamy white with marbled reddish brown veining. The flavour has notes of garlic and parmesan, while the aroma can range from garlic to honey to seasoned cheese. Shave into delicate slices and layer on pasta dishes, risotto, eggs, meat, fish and vegetable dishes.
